At Christmas, I always bake for my family and friends – they really appreciate that. This year, I’m looking to bake a good rum cake and, so far, the recipes I’ve tried are not what I’m looking for (too dry, too much butter flavor, etc.). Dear Rose Baker,

I want to start making and decorating my cakes for a profit. What is the first step I need to take? I went to school for Pastry Arts and I work in a bakery. My friends always have me make and decorate cakes for them, but now I want to build a house and I need the extra cash this business will bring in. I bake Caribbean Black Rum Cake and it is delicious, but I need your advice to take a step in the right direction.

There is a lot of information available for people who want to start a business. American Cake Decorating magazine has written a series on that subject; ices.com is another source. Your local library has a lot of information on demographics for your area. You need to determine how much profit your decorating area is making and whether that would be enough to pay for the equipment and supplies you need and still make a profit. Good luck!
