Xiomara (pronounced See-oh-mara) took third prize in the 10th annual three-day IDDBA Cake Decorating Challenge in Minneapolis in June 2005 (see the article in the Summer 2005 issue of Cake Prose). Rich Products was a corporate sponsor of the event, providing the cakes, cake boards and frosting for the event. Jim Caliendo, national training specialist for Rich Products Corporation, was one of the judges, along with Luke Bender, technical sales representative, Maplehurst Bakeries, Inc.

The event featured three days of non-stop decorating. On Sunday, June 5, each contestant decorated a wedding cake. On Monday, June 6, each contestant decorated enough cakes to fill one bakery case. On Tuesday, June 7, each contestant decorated three cakes of her choosing from each category: special occasion; theme/event; and decorator's interpretation of the IDDBA's Dairy-Deli-Bake show theme - "Speak Easy."

"Xiomara's wedding cake stood out as classic and elegant, and the detail was amazing," says Caliendo.

Xiomara, a native of Nicaragua, has been a cake decorator for 11 years, 10 of them at Publix. She says she loves decorating cakes for her customers, and enjoys trying new ideas and new cakes. Besides wedding cakes, she enjoys the challenge of decorating mini cakes and cakes with different shapes.

This was Xiomara's first time entering the IDDBA contest, but she said she hopes to enter again in 2006.
