Thanks for asking! Yes, you can freeze after decorating on Saturday, but remember to reduce the shelf life by four days since the cakes were already in the cooler from Tuesday to Saturday. We recommend a shelf life of 10 days in refrigeration.
So in your case, if you base ice on Tuesday and refrigerate, then decorate on Saturday and freeze, you’ve already used four days of refrigerated shelf life.
We would recommend that you base ice, decorate and freeze on the same day. Or, base ice, freeze, then decorate when needed and put directly into retail display.
Refrigeration is not a good way to “hold” the product. The freezer is always better! Thanks for asking!
